Pasta with Kale & Sausage Sauce

We'd been in a rut with kale for a while and had gotten tired of eating it with lentils so it had been a month since we picked any. The plants have filled out and we realized we needed to eat some but in a different way. Here's what we came up with.

Pasta with Kale & Sausage Sauce

Ingredients:
3 Spicy Italian sausages, removed from casing and crumbled
5 oz kale, washed and torn from stems
2 cups red tomato sauce (We use 5 Minute tomato sauce)
1 clove garlic, minced
pasta

Directions:
Set a pot of water to boil large enough to cook your pasta. In a skillet, brown the crumbled sausages. When the water boils, place the kale in the pot and blanch for a few minutes. Remove the kale from the pot using a slotted spoon, reserving the water in the pot. Return the water to a boil and cook the pasta. While the pasta cooks, chop the kale. When the sausage is cooked, add the minced garlic and saute one minute. Add the two cups of red sauce and the chopped kale. Heat over medium heat until the sauce is warmed. Drain the pasta and serve the sauce over the pasta with Parmesan cheese.

hi there, just came across your blog, via Transplanted Gardener, via... LOL the blogging highway.. anyways.. your kale and sausage pasta sounds delicious and looks very yummy!! i have an abundance of kale as well all of them were volunteers from 1 kale that flowered and went to seed last year.. am going to try your recipe one of these nights, i have a pkg of turkey sausage that i didn't quite know what to do with!

We've got kale at the moment as well, loning it. We do a greens pie, with broccoli as well, all the greens are cooked up, lightly with garlic and oil, then we put a Filo sheet in the pie dish, cook it for about 10 minutes, layer in the greens and some fetta of cheese, and put another sheet of filo on top, cover in gomasio or just sesame seeds- bake again, goes well for left over lunch as well. But hey, I love greens!!

Good Afternoon Emily, I wish i had some of your Kale to cook. While I am on Coumadin, I am not suppose to eat much greens, but today I was told I could eat some to thicken my blood. I like all greens, but especially Kale.

Also...Enjoyed reading about and seeing the currents...
